Well this weekend was just as I had hoped…relaxed and filled with family love! By relaxed I totally mean lazy, life around here has been hectic and we all need a long R&R weekend!
So to add to my laziness and pro activeness (yes I know I am full of oxymorons today) I thought ahead the night before and made apple pie overnight oats. Thought it would be festive too eh eh eh am I right? Ah who am I kidding, totally pulling some sad jokes here recently!
So these oats took about three minutes to put together and they were smashing if I do say so myself. It is great to because I made a wee one (overnight oats) for my wee one (Evelyn) and it was just so nice this morning to sit down and have breakfast already made with no mess. Ahhhhhh this is the perfect mom life if I do say so myself!
A great thing that has to do with overnight oats that I just love is the variation you have. You can combine the basic ingredients and then add the flavors to your liking. I am already telling you right now that in the fall I like to make pumpkin pie overnight oats or oatmeal and it is just to die for. And all things cinnameneee in the fall too or just all the time:). This time of year I am fruity and blueberries, apples. Peaches, and strawberries are my jam!
These overnight oats are featuring dense nourishment with the body thanks to the boost of chia seeds and the antioxidants provided by your choice of fruit. Oats always leave me satisfied and I now see myself having a prosperous day thanks to my three minute put together breakfast for my family.
- ½ cup oats
- 1 tablespoon chia seeds
- 1 cup of vanilla almond milk
- Handful of diced apples as a topper
- 1 teaspoon of cinnamon
- Optional: 1 teaspoon of raw sugar or a dollup of maple syrup
- Combine ingredieant in order (except fruit) and let sit in an enclosed container overnight.
- In the morning, layer with your choice of fruit and stir
- Dig in!
Ahhhh life is good no?
Now I am going to continue to sip on my matcha tea this afternoon and watch my little one run around in the grass with a big ole smile on her porcelain face.
This evening we have plans to watch fireflies as our fireworks in the backyard. Bring out the flannel blankets and popcorn!
