Sort of healthy No Bake Cookies!
Well it’s a cookie, what did you expect? 🙂
This is a great fun cookie recipe to make with the little ones or just to make in general! I did my own twist on it and it was a hit in my home!
Growing up, my mother was a stay at home momma to four of us kids. In our household there was always something, brewing, cooking, or more importantly baking! My mother had a really big sweet tooth, though she limited what she gave us, I always remember sticking in that one or two sticky fresh baked cookies in my mouth!
The notorious one that my father loved was no bake cookies…and peanut butter cookies…but let’s focus on the no bake cookies today!
These cookies is a staple in my childhood dreams. And though I still keep that family recipe in my own kitchen cabinet today, I still have a little bit of adventuress and creativeness in me to create something a little bit healthier for my wee one. Because Lord knows that she can’t have just one or two cookies;)
So here it is for ya, it’s healthy because of the coconut oil (win in my book) and the almond milk substitute for regular milk!
- 3 ¼ cups of oats
- ½ cup of cocoa powder ( I totally substituted nesquik because I was out!)
- ½ cup of coconut oil
- 1 ¾ cup of sugar
- 1 teaspoon of vanilla
- 1 teaspoon of salt
- ½ cup of peanut butter
- Add everything to a bowl, whisk, and put on a baking pan, let sit for 30 minutes just so it can take shape and then dig in!
