Do you remember Coco Puffs being a huge hit in the 90’s? They still make their mark today on the shelves. Well I was recipe testing this morning with chia pudding. Something I have made for breakfast for years but I wanted to try chocolate out. Well I ate it this morning and the first thing I thought about was coco puffs! It was so yummy and I gobbled it up in like 4 minutes. Yeah didn’t even hit that 5 minute mark.
Can ya blame though? Seriously delicious!
You guys all know how I rave about chia seeds! Well this post has them and I am just so delighted to share with you the wonderful breakfast I had this morning!
Breakfast is the best meal of the day for your body and to start your day off just right. Sometimes people who work, or have kids, or both, get side tracked and skip breakfast. Please do your body a favor and don’t do this!
The word breakfast has a purpose. You just won’t woke up from sleeping, hopefully all night without interruptions, and you wake up. What we don’t put in the equation is that our bodies our fasting throughout the night. Obviously we can’t eat while we sleep and our bodies need a break from eating anyways because it’s a workout for our body to process everything we put in our bodies. The word breakfast means what it says in the word…break-fast…you’re breaking your fasting. Sounds a little weird but yeah. When you skip breakfast your body is working overtime and gets stressed because it doesn’t have those vital nutrients it needs in the morning to keep you running around like a happy camper!
So anyway, don’t skip breakfast! And if you don’t have time in the morning, either make time or prepare the night before. Which is what I have for you here that is a healthier and easer alternative than skipping breakfast for both you and your body.
Overnight chia pudding baby.
- ½ cup of chocalote almond milk
- ¼ cup of chia seeds
- Refrigerate the night before and is ready in the morning!
- If your forget this the night before, just try to make early in the morning and let sit in refrigerator for 1-2 hours and stir well!
You can also do this with oats too. And you can make it super cute by putting in a little mason jar and grabbing out the door in the morning. Yay!
As a brunch, I made tofu scramble and it was a splurge of the moment breakfast. I didn’t press my tofu as good or long as I should of and well the result was a not very firm tofu but flavor was all there!

The chocolate chia pudding is a huge hit with the kids. It also helps their digestive system, if they have a hard time going number 2…this will do it. Chia seeds are known for flushing out your system of all the bad toxins. You can find more about the health benefits here on a post I did awhile back.
