Hey All! Today is freezing with a fresh blanket of snow outside, Evelyn and I just came in from playing and shoveling in the snow. We had so much fun, she made snow angels, threw snowballs, ran through snow drifts, and would free fall into a pile of snow I just shoved there from our driveway!
When we came inside our tummies were roaring for something to fill them! So I instantly headed on over to the stove. One of my favorite quick fixes in the winter time for a meal is baked veggies. Its quick. Its easy. And its very yummy! My typical favorite baking veggies are usually onions, mushrooms, carrots, and I LOVE baked eggplant. However today, I had some cabbage in the fridge that needed to be eaten and this, too, I absolutely love baked! I had some broccoli in there as well so I just threw the two together and started working.
Baked Cabbage and Broccoli
1 head of cabbage
1 large broccoli floret
2 cloves of garlic
2 tablespoons of olive oil
Salt and pepper to taste
Preheat the oven to 400 degrees and start cutting up your veggies in the size you prefer. Spread olive oil onto pan and leave some olive oil to put on top of your veggies later. Lay your veggies on pan. Mince garlic on top of veggies. Salt and pepper on top with remainder of olive oil. Place into oven for twenty minutes or until tender.
This is such a yummy meal that is bursting with antioxidants and is great for the chilly season! Both veggies are known for being anti cancerous agents and are just delicious in general! Hope you all have a cozy day!
