Summer is about here, pool is opened, and Popsicle’s are in the making!
Evelyn likes and only likes pureed fruits. The ones in the pouches or applesauce jars specifically. It’s very frustrating as a momma and I feel like she wants to spread her palette but I think she is just scared. Here recently she has been licking pineapples, watermelon, and mangoes. And I think she will love peaches if she just gives them a try. It’s frustrating because she eats with her eyes (don’t we all) and I feel like she is intimidated by how some of these fruits look so she just sticks to her comfort zone. Which is purees.
As a momma’s job, we need to make sure our children get the right diet/ vitamins for them so I work hard in my kitchen to please her. And now that summer is here I have created a fun dish for kids that I know they will love if you conceal well and have the right fruit combo. Fruit Pops!
Evelyn gets excited when she sees them and that makes my heart soar high! I have concealed a little bit of spinach, apple, strawberries, blackberries, and a banana.
She gobbles these down on our hot days.
Ruby Red Pops
7 spinach leaves
½ cup of strawberries
¼ cup of black berries
1 cup of apple juice
Today our plans are to deep clean the house (I like to do this one or two times a week), catch up on emails, and some landscaping.
I have a landscaping problem with adding flowers and flowers and maybe a new flower bed here or there? Its beautiful though, and a lot of hard work but it’s really great quality time for Evelyn and I because we both love doing it.
Our garden is thriving. The seed starters helped tremendously. I have broccoli, brussel sprouts, lettuce, kale, tomatoes, cucumbers, strawberries, and blueberries this year. I THINK I have a zucchini growing in there too but not sure where it came from and trying to find it a good spot because they need a lot of space. What’s in your garden this year?
Hope the kiddos enjoying these for you as much as Evelyn does for me! I also like to eat them too every now and then for cooling off and because they are delicious!
