So yes, I have finally found time from not being a crazy mommy to write on this beautiful blog! Someone has to be there when their daughter is climbing up dangerous shelves trying to get to her paint supply, right?
Okay so now that it is full blown summer and we are getting heat wave after heat wave coming at us. I am now obsessed with salads. Totally and completley.
And not just any salads. The leafy greens with a few tomatoes are sometimes quite boring to me. I want something fresh and hearty too. Like always.
I utilize cucumber quite often because, well, we have two or three new ones daily from the garden. I mean it’s hard to catch up quite frankly, but I promise that I am not complaining. In fact I love it! And soon we will be pickling….yay!
So back to the fun funky salads I would like to share with you all. Quinoa, barley, and chick pea are great bases for having a hearty salad. The one shown below has quinoa as a base. Olive oil, balsamic, and sea salt are great for flavor and vinaigrettes. Then we get to the toppings. In which case the cucumbers come into play. I skin the cucumber and dice that baby up. I prefer them to be thick and cube like. Adding cherry tomatoes usually or dried cranberries, and then another variety of my favorite toppings (Cashews, black beans, mango (oh yes I did say that) onion, or some cabbage too). Store it in the fridge to let the flavors settle in for about an hour. You will find yourself very fulfilled afterwards! Pic below I did not have time to edit, sorry!
So there is my little tid bit on my salad splurge on this hot july!
Our days have been hot and hazy here. Also filled with lots of landscaping projects and tending to the garden. I have been collecting creek rock to the extreme for outer edgings for my flower beds and don’t even get me started on the new playground we got for our daughter. Okay I just got started on it, I bought this beautiful playground for the wee one which was delivered in the evening. The next two days were filled with lots of wood, drilling and sweat. Need I remind you that during these past few days there was a heat advisory going on? Perrrrfect!
I have been pinteresting quite a bit on pallet ideas. I am trying to cleap up our backyard, its starting to look a little to junky and I don’t want to just burn all of these pallets. I would really like to make some projects out of them and have a few in mind. In the future I might just have my first DIY post!
