I am both very excited and proud to put up this post!
Later today, Noah and I are going to be attending a housewarming party being hosted by one of our close friends! I can’t wait to go, they just bought a house recently and have had an extensive remodel on it. It is just going to be gorgeous and I will be drooling over everything I see.

Now let’s get to a better description of some awesome yummy taco dip we are about to present.
The host is making mini tacos and avocado hummus dip (um yum!) So I thought what best to pair with mini tacos… taco dip and chips!
Let’s go for a taco theme shall we!
So I started to research (ahem pinteresting) some fun ideas for a vegan 7 layer taco dip….and what do I get…absolutely nada.
A total bust.

I was astonished and I thought to myself….time to be creative!
So I started to get over to my kitchen…pull my hair up, and get to work. Mind you this was the morning of the house warming party and I , of course, procrastinated on making the recipe sooner so hopefully it all goes well. It did.
The first layer in a 7 layer dip is typically refried beans. I was depending whether to make my own refried black beans for a healthy alternative or keep them whole. I decided to do homemade refried beans. I thought it would have looked prettier being whole black beans (I know, I am one who eats with my eyes…am I alone) but I wanted to go the extra mile and make my own refried beans.
Refried black beans
½ to a whole finely diced sweet onion
2 cans of black beans rinsed
1 tablespoon of lime juice
2 ½ cups of water
4 cloves of garlic
Salt and pepper to your desire
2 tablespoons of olive oil
Heat a pan with olive oil and add diced onion. Sautee on medium high heat for approximately 3 minutes or until clear and then add minced garlic cloves. Add two cans of rinsed black beans and start to mash with a potato masher. Stir. Add water and lower heat. Continue to stir frequently and turn heat off completely. Add more water if needed but the cups I listed above worked perfectly for me. As it cools the refried beans become thicker.
Then The “second layer” Is typically cream cheese. So I did something I have never done before. I made cream cheese. This was very easy with just time consuming steps
DIY Vegan Cream Cheese
1 ½ cups of cashew soaked in warm water for two hours
2 tablespoons of lemon
2 tablespoons apple cider
Add soaked cashews to blender and add the rest of the ingredients. Blend/pulse. You want the consistency of a thick cream. You may need to add a little water. Spoon out the cashew paste into a cloth and let sit for two hours to get as much moisture as possible out. When it is done sitting simply spread onto dip or whatever purpose you choose to use it for.
Now time to present the final finale…
- 16 ounces Refried Black beans
- 8 ounces Vegan Cream Cheese
- Red Onion
- A few fresh black beans
- Layer accordingly
There ya have it, the first vegan seven layer taco dip I have yet to see! And ya know what…IT WAS DELICIOUS. Yeah I like to toot my horn.
This recipe is fun, festive, and a great party favor so to speak. I was a little stressed about it ( I wasn’t sure how it was going to turn out) but it all came together and it looked so yummy with all of the colors! Oh the colors!
We went to a housewarming party that evening and I brought the dip. I was sweating, I was so nervous….hoping it wasn’t going to be a catastrophe. I was quite when I first got there, I didn’t want to tell everyone it was vegan because for some reason people tend to shy away from those recipes. But as soon as the first chip was in their mouth, boom, “hey what do you think…it’s vegan!” Took a few people off guard but hey, couldn’t help myself! And as the night went on… the taco dip ceased to exist mouthful by mouthful.
It was devoured by everyone and people raved about it! I puffed out my chest, not boisterously but proudly. Yayyyyy success!
