Hellllooooooooo weekend, you have never looked so good!
Today is a very interesting concoction of mine, that is literally so bomb. The recipe is approved by the husband and unborn child, not so much with the already born child but, hey, we will get there eh?
This recipe below is very fulfilling, the cubed mango is so juicy and really paired well with the quinoa and maple sweetness. This would have been extra good if I had had some diced avocado to put on the base of the tortilla shell but it just so happens I’m out.
This is a great dish to serve at little parties or incorporate in your family meals, really mixes it up and isn’t something that you see day to day. With the quinoa in the mix, it will have you feeling full and glowing afterwards.
Sweet Quinoa Mango Taco stuffing
- ½ cup of quinoa
- 1 cup of water
- 1 mango
- 1 tbsp of organic maple syrup
- ½ lemon
- ¼ cup of sliced cabbage
- Pinch of cilantro
- Salt and pepper
- 4 tortillas
- Start to cook your quinoa. For this dish, I used ½ a cup and cooked it in a rice cooker by adding 1 cup of water and pressing the magic button
- In a bowl, add the remainder ingredients
- When quinoa is done, throw into the bowl. It is best to add it when it is hot to soften cabbage shreds and bring out the mango juices
- Stuff into torillas accordingly.
- Optional: Add Diced avocado as a topping if you wish.
This weekend I foresee online shopping. As of today, I am getting our sweet little Evelyn all dolled up for soccer practice, sigh, and planning her birthday party coming soon! Oh four years, you have passed too quickly! And now we have Lillie coming in just a few months, really trying to appreciate the now, it goes by to quickly!
Online shopping is going to consist of new finds for our soon to be bathroom. And maybe some for Lillie’s room too. We have a new bathroom we are installing in our home to free up a whole new bedroom for the baby.
Evelyn just informed me that she wanted to share a room with her sister, and I am thinking, would of been nice to hear that a couple months ago! But either way, it’s good the girls will have there own rooms and space.
For the bathroom I am having some serious dreams about, like herringbone floors and shiplap walls. And a nice rolling clear stand up shower door. Sigh, we will see. I will make sure to take before and after pics, I have a feeling, and hoping, that the pictures will be a drastic change, in the a positive of the latter of course.
Lillie’s room is still a mystery, I go for one theme/idea then bounce to another. I really want the girls to have rooms that reflect their personalities, not just two pink rooms in our home, you know? The more she moves around in there the more I think I am kind of getting to know her personality. As of now, she is a little on the shy quiet side (I am sure she will come out throwing punches and screams just because I made that statement).
